Objective
Ensure the highest level of cleanliness and hygiene for food trucks operating within government building premises, adhering to Australian cleaning standards and food safety regulations.
Scope of Work
- Thorough cleaning and sanitising of all food preparation surfaces.
- Regular wiping and disinfecting of high-touch areas such as handles, taps, and switches.
- Emptying and sanitising rubbish bins.
- Cleaning and mopping of floors to remove spills and debris.
- Dusting and wiping of external surfaces and equipment.
- Ensuring all cleaning activities comply with Australian workplace health and safety requirements.
Method
- Use a colour-coded cleaning system to prevent cross-contamination.
- Begin by removing all loose debris and rubbish from the area.
- Apply appropriate cleaning agents to surfaces, allowing adequate contact time for effective sanitisation.
- Wipe down surfaces with clean, damp cloths, ensuring no residue remains.
- Mop floors with a disinfectant solution, paying special attention to corners and under equipment.
- Inspect all areas for cleanliness and repeat any necessary steps to meet quality criteria.
Equipment

- Cleaning trolleys equipped with necessary supplies.
- Rubbish bins with liners.
- Personal protective equipment (PPE) such as gloves and masks.

Good | Surfaces are clean with minimal residue. No strong odours. Floors are clean with minor spots. Rubbish bins are emptied but may have minor stains. High-touch areas are mostly clean. |
Pass | Surfaces are generally clean but may have some residue. Mild odours present. Floors have visible dirt in low-traffic areas. Rubbish bins are emptied but not sanitised. High-touch areas have visible smudges. |
Fail | Surfaces have visible dirt and residue. Strong odours present. Floors are visibly dirty and wet. Rubbish bins are full or not emptied. High-touch areas are visibly dirty. |
Documentation
